Sweet Potato Skillet
The weather has been so crappy in Nashville lately, I’m pretty sure it’s rained a month straight. Not so great for my social life, but really great for getting lots of work done! I recently asked ya’ll what you wanted to see more of on the blog, and almost unanimously it was more healthy recipes. Most of my OG followers know about my company TheFitGal, an online health and fitness platform offering healthy meal plans and workouts catered to women. While I have put that on hold to focus on my new business ventures I still really love the community I’ve built there, and want to get back to pushing out more wellness content through The Second Muse.
This Sweet Potato Skillet recipe is jam packed with nutrients and flavor! You can make it in 30minutes, its gluten-free and vegetarian. While I do eat meat, I’ve found that my body does not digest it well, so I use substitute meat when I can. The only “meatless” (or “fake meat” as I like to call it) brand that I use is Quorn. I haven’t found anything that tastes as good as their products and honestly it taste the exact same as meat! Their meatless grounds (which I use in this recipe) are my favorite, they cook super quick and have great flavor. If you prefer to use regular ground beef, go for it! This is one of those recipes you can add and substitute ingredients as you wish and it still tastes bomb.
Ingredients:
2-3 Tbsp extra virgin olive oil
1/2 to an entire bag of Quorn Meatless Grounds (depending on how much you want) - if you use regular ground beef you can do 1 lb.
1 Tbsp garlic powder
1 Tbsp paprika
½ cup chopped onions
1 cup sliced grape tomatoes
2 medium sweet potatoes - diced
Salt and freshly ground black pepper
Fresh parsley for garnishing
Directions:
In a large pan on medium heat add meat grounds 1-2 Tbsp olive oil,garlic and paprika. Cook for 3 min.
Add onions and tomatoes and cook until onions are soft.
Add chopped sweet potatoes with about a half cup of water. (for even more flavor you can add 1/2 cup of chicken broth)
Cover the skillet and cook on stove top until the sweet potatoes are tender. Stir occasionally, if necessary, add more olive oil or water.
Garnish with parsley, salt and pepper
