Colleen's Guacamole!
The recipe that I most often get asked for is my “secret” guacamole recipe (it’s that famous). I post it a lot on social media and always get asked what ingredients I use...but I'm not ready to give that up just yet!
Instead, THIS recipe is bringing back the basics. You can’t have good guac without creating a great base, I’ve used this as my classic go-to guac recipe and then I build in the “secret” ingredients from there.
I like my guac like I like my mashed potatoes...Lumpy! I absolutely hate when guacamole is too smooth, it actually kind of creeps me out. The key to lumpy guac is to mix with a spoon, not a blender. This is KEY. (Underline, bold, italics!!!!)
The great thing about guacamole is that you can create it to be as spicy, tangy, limey, fruity, salty, or whatevery that you want! This is your (super delicious) classic recipe, get creative and add ingredients that match your meal. The sky is the limit!
INGREDIENTS
- 3 ripe avocados
- 1 medium tomato chopped
- ½ medium red onion chopped
- 1 lg jalapeno chopped
- Juice from ½ lime
- 1-2 Tbsp fresh minced cilantro
- 1 tsp cumin
- ½ tsp chili powder
- 1 tsp Tajin
- Dash of salt
DIRECTIONS
1. Cut avocados in half lengthwise, remove the pits and scoop out into a bowl. Use a spoon to mash until creamy BUT still with some lumps! Add in all ingredients (tomatoes last) and mix well. Taste and add additional salt/spice to taste.
2. Serve immediately.
3. To keep your guac lasting longer place saran wrap DIRECTLY on top of guac so that there is no air touching it. ENJOY!
