Sparkling Grapefruit Mojito
My mint plant was getting a little overgrown so I decided what better way to put it use than by creating a fun Valentines Cocktail! (As if I needed an excuse to make a drink recipe.) This refreshing twist on one of my favorite drinks, the Mojito, is a fun/flirty cocktail you can share with the one you love!
*recipe makes two, double ingredients according to group size.
Ingredients:
1 TBSP Agave Nectar
Fresh Squeezed Juice from 1 Lime (about 2 TBSP)
Fresh Squeezed Juice from 1/2 Grapefruit (you can add more juice if you want yours more tangy)
10-12 Mint Leaves (I always add more because I can never have too much Mint!)
1 cup of Ice
3 ounces of Rum
1/2c Sparkling Wine or Champagne
*Tip: Do not use cheap rum or champagne, you will taste a difference!
RECIPE HACK
*If you don't have the time or don't want to put in the work for the fresh squeezed ingredients, substitute them for Italian Grapefruit Soda. Quicker, but higher in calories.
DIRECTIONS
Juice the lime and grapefruit.
Add the lime/grapefruit juice, agave, mint leaves, and ice to shaker. If you prefer tangy over sweet at the grapefruit and lime slices you squeezed.
Add Rum and Shake. DO NOT add anything carbonated or you will have a big mess!
If you added the grapefruit and lime wedges, filter them out.
Fill glass with ice and fill halfway with mint/juice mixture. Fill the rest of the glass with sparkling wine or champagne. Stir completely.
Garnish with grapefruit wedge and mint leaves.
